We live in South Texas, where tacos are basically a food group. We love crunchy tacos, soft tacos, taco salad, you name it.

While tacos themselves are pretty easy to make, sometimes it’s nice just to throw everything in one dish and not have to mess with cooking the filling, heating the shells or tortillas, making all the toppings, and then putting it all together.

This vegetarian taco casserole has everything you love about tacos, baked into one comforting, scoopable dish.
